In the heart of the Island of Beauty, the producers united under the name Casgiu Casanu preserve the ancient art of farmhouse cheesemaking. Each producer raises goats or sheep of local breeds and transforms the milk from their own herd directly on their farm. The milk is worked raw, using only rennet and salt, in order to retain all its nutritional qualities and the aromas of the Mediterranean maquis. Animals graze freely across diverse landscapes, from plains to mountains, following the rhythm of the seasons. This wild feeding gives each cheese a unique personality deeply rooted in its terroir. Corsican cheesemakers are at once shepherds, artisans and sellers, favouring short distribution channels and human-scale farming. Their know-how, passed down through generations, results in a range of fresh, semi-aged and aged cheeses whose diversity and intensity reflect the richness of the island’s heritage. Respectful of the environment and attentive to the quality of raw milk, each wheel embodies the authenticity of Corsica and a deep love for the craft.
