A winery that for more than ten years has embraced a fascinating challenge: producing wine in full respect of the history, nature, and identity of the territory. Run by a single producer, it stands out for its commitment to preserving ancient local grape varieties. Today, it cultivates 19 local varieties—many at risk of disappearing—reviving a unique agricultural heritage. Tradition meets experimentation: it was among the first to age wine underwater, using a marine cellar that harnesses seabed conditions to create unprecedented sensory profiles.
